Winemaking:
The grapes are harvested manually in the vineyard and are filled with care in cassettes for the transportation to the winery. They are pressed straight away, left for 5 hours with skins and then fermented at a controlled temperature of approximately 15° C without the assistance of selected yeasts. At the end of the fermentation process, the wine is left to clarify with static decantation until the end of winter. It remains in stainless steel vats until spring, when it will be bottled: after about 1 month of ageing in the bottle, it will be ready to drink.

Sensory Profile:
Color: pale coral pink
Bouquet: intense, with scents of wild strawberry, red fruits like cherries and at the end red apple
Taste:  fresh and clear, quite sapid
Food coupling: Particularly indicated as an aperitif or with summer appetizers, pasta dishes, delicate fish.
